Ina’s Tip
Why the bicarb of soda? It gives a good colour to the chips, but it neutralises some of the Vitamin C. The choice is yours.
Method:
Rinse and scrub the potatoes (no need to peel).
Cut the potatoes into chips.
In a medium saucepan, measure water, salt, and bicarb (if using). Mix to dissolve.
Add the chips.
Bring the chips to a slow boil. Cook for 7 - 10 minutes until they're just beginning to soften.
Strain the chips in a colander and shake off the excess water.
Dry them open on a cooling rack.
Leave the chips, well spread out, for 30 - 45 minutes.
Divide them in half.
Toss the chips with 2 T (30 ml) oil.
Air fry at 200°C ,without a paper liner, for ± 25 minutes until crisp and golden brown.
Repeat oiling and frying with the remaining half.
Flavoured Mayo
Mix together the mayo and Flavour Bomb.
Use as a dip for the chips.
