Aubergine & Butterbean Curry

An appetising vegetarian choice. The beans add protein to balance the healthy flavourful meal.

You Will Need:

Method:

Heat the oil in a large heavy-based frying pan.

Fry the aubergine cubes until dark brown, stirring often.

Remove the aubergine cubes from the pan.

Season them with Seasoned Sea Salt. 

In the same frying pan, stir the onion until soft and translucent.

Add the Butter Chicken Curry Sauce and cream, and bring to a simmer.

Add the drained butterbeans.

Cook for 3 minutes.

Add the cooked aubergines.

Cook for another 5 minutes. (Do not stir too much.)

Scatter with coriander leaves (optional).

Serve hot with flatbreads, fluffy rice, and sambals of your choice.
