Beetroot & Strawberry Salad

Earthy and sweet accompanied by peppery rocket leaves, Balsamic dressing and irresistible crunch of crushed caramelized nuts. A simple yet unusual salad.

You Will Need:

  • a small bunch rocket leaves
  • 4 medium beetroot, boiled and quartered (or 8 pre-cooked baby beetroot)
  • 200 g strawberries, rinsed, trimmed & halved
  • Ina Paarman’s Balsamic Vinaigrette
  • 1 small bar peanut brittle (about 100 g), crushed
  • a small bunch rocket leaves
  • 4 medium beetroot, boiled and quartered (or 8 pre-cooked baby beetroot)
  • 200 g strawberries, rinsed, trimmed & halved
  • Ina Paarman’s Balsamic Vinaigrette
  • 1 small bar peanut brittle (about 100 g), crushed

Ina’s Tip

1) Many supermarkets sell ready-to-eat cooked beetroot in the salad section. This will save you prep time.

2) Optional to use 1 batch strained amasi cheese also in the salad. See recipe. For the amasi strained cheese, it is best to strain the amasi for 3 days (instead of only overnight) for a firmer cheese result that is scoop-able and extra creamy.  

Method:

On a large salad platter, arrange 2/3 of the rocket leaves, then top with the beetroot quarters and cut strawberries.

Dress with a drizzle of Balsamic Vinaigrette.

Scatter all over with the crushed peanut brittle and serve.
