Ilse’s Biltong Paté

This delicious biltong paté from Ilse van der Merwe’s book, ‘Easy Al Fresco’ is a winner.

Ilse’s Biltong Paté

You Will Need:

  • ± ¾ cup (100 g) fine biltong powder
  • 1 cup (250 ml) sour cream
  • ¼ cup (60 ml) mayonnaise
  • 1 t (5 ml) wholegrain or Dijon mustard
  • 1 t (5 ml) finely grated lemon rind
  • 1 – 2 t (5 – 10 ml) fresh lemon juice
  • a handful fresh chives and / or Italian parsley, finely chopped
  • sprinkle of Ina Paarman’s Meat Spice
  • ± ¾ cup (100 g) fine biltong powder
  • 1 cup (250 ml) sour cream
  • ¼ cup (60 ml) mayonnaise
  • 1 t (5 ml) wholegrain or Dijon mustard
  • 1 t (5 ml) finely grated lemon rind
  • 1 – 2 t (5 – 10 ml) fresh lemon juice
  • a handful fresh chives and / or Italian parsley, finely chopped
  • sprinkle of Ina Paarman’s Meat Spice

Method:

Stir all the ingredients together in a mixing bowl until thoroughly combined.

Taste, then adjust the seasoning.

Serve as a spread on crackers, crostini’s, or French bread.
