Broccoli Pasta

How to make broccoli the family’s favourite vegetable? Just add pasta and a creamy sauce. We also get additional flavour by boiling the pasta in the broccoli water.

You Will Need:

  • 2 litres boiling water
  • 350 - 400 g head of broccoli, cut into small florets
  • Ina Paarman’s Vegetable Spice
  • 350 g spaghetti
  • olive oil
  • 1 onion, finely chopped
  • ½ t (2,5 ml) Ina Paarman’s Green Onion Seasoning
  • 1 clove garlic, crushed
  • ½ cup (125 ml) fresh cream
  • 1 x 200 ml Ina Paarman’s Ready To Serve Cheese Sauce
  • 3 T (45 ml) hard cheese, grated
  • 2 litres boiling water
  • 350 - 400 g head of broccoli, cut into small florets
  • Ina Paarman’s Vegetable Spice
  • 350 g spaghetti
  • olive oil
  • 1 onion, finely chopped
  • ½ t (2,5 ml) Ina Paarman’s Green Onion Seasoning
  • 1 clove garlic, crushed
  • ½ cup (125 ml) fresh cream
  • 1 x 200 ml Ina Paarman’s Ready To Serve Cheese Sauce
  • 3 T (45 ml) hard cheese, grated

Method:

Boil the water, add all the broccoli at once. Cook fast for 5 minutes.

Remove broccoli with a slotted spoon and season with Vegetable Spice to taste. Keep the cooking water in the pot. Chop broccoli fine with a cook’s knife  and keep on one side.

Add all the pasta to the boiling water in which the broccoli was cooked. Cook pasta until tender. Reserve ½ cup (125 ml) of the pasta water and drain the rest.

Return the pasta to the empty pot, toss with 2 T (30 ml) of olive oil and Vegetable Spice.

In a separate small frying pan add 2 T (30 ml) olive oil and sauté the onion pre-seasoned with Green Onion Seasoning until soft and golden.

Add the garlic and cook for another minute.

Add the cream and ½ cup, reserved pasta water, Cheese Sauce and chopped broccoli. Bring to boiling point.

Toss broccoli sauce with pasta.

Serve with grated hard cheese.
