Cajun Chicken Burgers

The secret to these burgers lies in the short cooking time of the chicken breasts and the delicious onion topping.

You Will Need:

Ina’s Tip

You can make a flavoured mayo by mixing ½ cup (125 ml) mayonnaise with 1 sachet of Cajun Flavour Bomb.

Method:

Spread the halved burger buns with butter.

Heat the frying pan and toast the buttered sides of the buns in the hot pan.

Butterfly and flatten the chicken breasts.

Season the chicken breasts with the Cajun Seasoning.

Heat 2 T (30 ml) oil in the unwashed pan (previously used for toasting the buns) over high heat.

Pan-fry the butterflied breasts.

Cook them only until they're just lightly browned. (Do not overcook.)

Remove the chicken from the pan.

To the remaining pan juices, add the 1 T of oil and sliced onion.

Sauté the onion over medium heat for about 5 - 7 minutes until softened and golden.

Add the sachet of Cajun Flavour Bomb and cook for 1 minute.


To Assemble:

Spread the toasted buns with mayonnaise, add shredded lettuce, sliced tomatoes, the cooked chicken, and the deeply flavoured onion mixture.
