Cape Malay Vegetable Curry

A mildly spiced vegetable curry done Cape Malay style.

You Will Need:

Method:

Season the cubed potatoes with Masala Seasoning.

In a saucepan, heat the oil to smoking point, add the potatoes, and fry until light brown and semi-cooked.

Add the green beans and fry for another few minutes.

Add the cream or coconut milk, water, and Cape Malay Curry Sauce.

Bring to a simmer.

Add the cauliflower and stir through.

Cover with a lid and simmer until the cauliflower is tender.

Serve with roti or Yellow Rice and Tomato Sambal and/or Cucumber Raita.
