Cardamom Coffee

Strong, aromatic and addictive! This cardamom flavoured coffee must be enjoyed at leisure, sitting down talking to a friend. Instead of cardamom use spices such as anise, ginger or nutmeg, typical of Marrakech and Southern Morocco.

You Will Need:

  • 6 cardamom pods
  • 2 T (30 ml) sugar
  • 3 - 4 T (45 - 60 ml) finely ground coffee
  • pinch of salt
  • 2½ cups (625 ml) water

Method:

Toast the cardamom pods lightly in a small saucepan and then crush them in a motar with a pestle or in a small plastic bag with the flat side of a meat mallet.

Return crushed cardamom (husks as well) to the pot.

Add sugar, coffee, salt and water.

Bring just to the boil, cover with a lid and switch off the heat.

Leave the coffee to draw for 5 minutes.

Strain into tiny coffee cups (or glasses) to serve.
