Carrot Sambal with Orange

Carrots are so readily available and their colour matches perfectly with our curry palette. The addition of orange juice is a game changer.
Carrot Sambal with Orange

You Will Need:

  • 3 medium carrots, well scrubbed
  • ½ t (2,5 ml) Ina Paarman’s Masala Spice
  • 2 t (10 ml) grated orange rind
  • ¼ cup (60 ml) fresh orange juice
  • 3 medium carrots, well scrubbed
  • ½ t (2,5 ml) Ina Paarman’s Masala Spice
  • 2 t (10 ml) grated orange rind
  • ¼ cup (60 ml) fresh orange juice

Method:

Grate the carrots on the course side of the grater.

Toss with Seasoning and orange rind.

Squeeze the juice and pour over.

Cover and refrigerate.
