The reason for pre-microwaving the chicken is to make sure it is cooked right to the bone and not just browned on the outside while still raw inside.
Method:
To prepare the chicken butterfly-style, cut it open along the backbone and bend the carcass open, then turn it over and flatten the carcass by pressing on the breast-bone with the heel of your hand.
Mix together the flour, Stock Powder and Lemon & Black Pepper Seasoning and rub all over the carcass. Leave open in the fridge to dry the skin.
Mix together the marinade ingredients all over the chicken.
Reserve and refrigerate the rest of the marinade for later.
Prepare a medium hot fire.
Microwave the chicken for 10 minutes on 60% power.
Remove from microwave, brush chicken all over with olive oil.
Braai, skin side first until golden brown, turn and brown the other side while brushing with marinade and turning once or twice more.
Serve with extra marinade.
Delicious with braaied vegetables and Garlic or Mushroom Bread.
