Chicken Wraps with Pesto Dressing

Chicken breasts are the ultimate versatile prep-ahead lunch box staple. Basted with one of our Flavour Bombs, they become a delicious filling for chicken wraps, along with a light yoghurt-based basil pesto spread.

You Will Need:

Pan-Fried Chicken Breasts
Assembled Wrap
  • 6 large wraps (flour tortillas)
  • 1 baby gem lettuce, shredded
  • pickled cucumber (homemade or store bought)
  • 1 cup (250 ml) cheese, grated

  • 6 large wraps (flour tortillas)
  • 1 baby gem lettuce, shredded
  • pickled cucumber (homemade or store bought)
  • 1 cup (250 ml) cheese, grated

Method:

On a cutting board, slice each chicken fillet open horizontally (butterflied) to create a thinner breast fillet surface.

Mix 2 T (30 ml) oil with the Flavour Bomb sachets and stir to mix.

Heat 2 T (30 ml) oil in a large, wide, heavy-based frying pan.

Fry the breasts briefly until golden and ¾ cooked, then spoon over the Flavour Bomb mixture and continue cooking until the meat is just done.

Remove the chicken from the heat and transfer it to a plate.

Use a rubber spatula to scrape the remaining sauce over the chicken.

Cool, then cut on the diagonal into strips.


Basil Pesto Spread:

Stir all the ingredients together in a small mixing bowl.


To Assemble:

Lightly toast each wrap in a dry pan (optional).

Spread the wraps generously with the Basil Spread, then top with lettuce, pickled cucumber, cheese, and the cooked chicken strips.

Roll up tightly.

Cover and refrigerate.

Cut the wraps in half on the diagonal to pack in lunchboxes.
