Ina’s Tip

The syrup on its own can be diluted with sparkling water to make a refreshing lemon drink.

Method:

Basic Lemon Syrup:

First grate off the outer skin of the lemons on the fine side of a grater (or better, use a microplane).

Place the lemon juice and grated zest in a medium saucepan.

Add the sugar, citric acid, and cream of tartare.

Pour the boiling water over and stir to dissolve the sugar.

Bring to the boil for 5 minutes.

Remove from the heat.

Pour into clean glass bottles and refrigerate until needed.

Keeps for a month or more, if refrigerated.

Citrus Refresher:

Squeeze the juice of all the fruit into a large jug.

Stir in the lemon syrup and sparkling water to taste.

Add ice cubes and citrus slices.

Serve in pretty glasses.
