Cranberry and Apple Salad

This salad ticks all the boxes: sweet and sour, crisp and crunchy, finished with a lovely well balanced Vinaigrette.
Cranberry and Apple Salad

You Will Need:

Main Dish
  • ¼ cup (25 g) dried cranberries
  • ¼ cup (60 ml) Ina Paarman’s Classic Balsamic Vinaigrette
  • 1 large Golden Delicious apple, finely sliced on a mandolin
  • 1 T (15 ml) lemon juice
  • 2 stalks of celery with leaves, sliced
  • 4 spring onions with green stems, sliced on the diagonal
Main Dish
  • ¼ cup (25 g) dried cranberries
  • ¼ cup (60 ml) Ina Paarman’s Classic Balsamic Vinaigrette
  • 1 large Golden Delicious apple, finely sliced on a mandolin
  • 1 T (15 ml) lemon juice
  • 2 stalks of celery with leaves, sliced
  • 4 spring onions with green stems, sliced on the diagonal

Method:

Soak the cranberries in the Balsamic Vinaigrette for at least 20 minutes.

Toss the sliced apple with lemon juice.

Toss cranberry mixture with the apple, sliced celery and spring onion.

Pour a little more Vinaigrette over the salad just before serving.
