Dad's Best Roast Lamb Shoulder

This slow-roast lamb is the way to every man's heart. Fork tender, tasty, and served in a robust, meaty gravy.

Method:

Adjust the oven rack to one slot below the middle position, and preheat the oven to 160 °C.

Place the meat in a deep roasting casserole (with lid), fat side up.

In a small mixing bowl, stir together the Flavour Bombs (or Sun-Dried Tomato Pesto), Garlic Pepper Seasoning, vinegar, and Worcester Sauce.

Spoon the bomb mixture all over the meat.

Pour 1 cup (250 ml) of the water into the side of the roasting dish.

First, cover the casserole with a sheet of wet baking paper, then jam on the lid tightly (paper edges hanging over the sides).

Roast for 3 - 3½ hours or until tender enough to easily twist the bones from the meat.

Add the strong Chicken Stock made with ½ cup (125 ml) of water to the remaining pan juices.

Heat through.

Cut the meat as shown in the video and return it to the delicious juices in the casserole.

Serve warm with your choice of rice or roast potato and seasonal vegetables.
