Dates and Sun-dried Tomatoes taste a whole lot better than the prunes used in the past.
Drunken Dates

You Will Need:

Main Dish
  • 400 g fresh or dried dates, pipped
  • 1 x 240 g Ina Paarman’s Sun-dried Tomato Quarters, drained
  • .200 - 250 g streaky bacon, cut in half
  • ¼ cup (60 ml) brandy
  • Ina Paarman’s Sweet Chilli Chutney
  • cocktail sticks

Ina’s Tip

Luke warm brandy will burn easily but if you overheat the brandy the alcohol will evaporate and it won’t burn. Serve with the Sweet Chilli Chutney on the side as a dip.

Method:

Adjust oven rack to middle position.

Preheat oven to 200 °C.

Place a piece of Sun-dried Tomato into each pipped date.

Wrap each stuffed date in half a piece of bacon.

Place the dates on an oiled griddle pan and bake in a hot oven for ± 15 - 20 minutes.

Warm the brandy a little.

Pour the warmed brandy over the date rolls in the pan, while still warm and set it alight.

This concentrates the flavour and burns off some of the fat.
