Green Vegetable Medley

Even the vegetables can be pre-prepared in advance to relieve the kitchen of the last minute rush.
Green Vegetable Medley

You Will Need:

Main Dish
  • 2 punnets baby marrows, cut into flat ribbons
  • 2 punnets mange tout, cut lengthways
  • 2 punnets green asparagus, snap off hard ends
  • 500 g frozen baby peas (petit pois)
  • olive oil
  • Ina Paarman's Vegetable Spice
  • finely chopped parsley

Method:

Steam all the vegetables separately (except baby peas), until just done. Mix cooked vegetables with frozen peas. Toss with olive oil and Vegetable Spice and keep on one side.

Just before serving reheat vegetables in the microwave.
