Lentil, Tomato and Cheese Salad

A lovely, healthy salad. One of our favourites.
Lentil, Tomato and Cheese Salad

You Will Need:

Salad
  • 200 g cherry tomatoes, halved
  • Ina Paarman’s Green Onion Seasoning
  • 1 x 400 g tinned lentils
  • 1 red onion, cut into half rings
  • 3 T (45 ml) freshly chopped parsley
  • 2 T (30 ml) freshly chopped organum
  • 1 baby gem salad head
  • 1 roll (100 g) goats milk cheese with honey OR feta cheese, sliced
  • 2 T (30 ml) pumpkin seeds, lightly toasted.
Dressing

Method:

Season the halved tomatoes with Green Onion Seasoning.

Drain the lentils and decant them into a mixing bowl. Toss with onion, parsley, organum and seasoned tomatoes.

Line a salad bowl with baby gem leaves.

Add lentil mixture and top with sliced cheese and toasted pumpkin seeds.

Dress with Honey Mustard or Herb Dressing just before serving.
