Mango Mousse with Fresh Fruit

A refreshing South African summer dessert.

You Will Need:

Mousse
  • 3 large ripe mangoes, peeled and flesh cut away
  • 1 x 250 g Ina Paarman's Lemon Flavour Cheesecake Mix
  • 1 cup (250 ml) coconut milk
  • 1 cup (250 ml) fresh cream
To Serve
  • fresh fruit in season

Ina’s Tip

The mousse will also freeze very successfully to make a delicious fruit ice cream. Remove from the freezer to the fridge,15 - 30 minutes before serving to soften a little. When fresh mangoes are out of season, use 3 fresh nectarines.

Method:

Place the mangoes in a food processor. Add the Cheesecake Mix and coconut milk and blend until smooth. Whip the cream and add it to the fruit mixture in the food processor.

Pulse until blended. Dish into a glass bowl, cover and refrigerate. Present the mousse in its glass bowl on ice surrounded by a selection of fresh fruit in season.
