Microwave Jacket Potatoes

Here is a delicious, nutritious quick after school lunch that you can prepare, for yourself. No need to warm the Sauce, the heat in the potato will do the job.

Method:

Cut a cross through the skin of the 'flat' side of each potato. Push three toothpicks deeply into the underside to form 'legs'.

The toothpicks serve to lift the potato for better microwave penetration. They are also a good indication of when the potatoes are cooked. When the legs collapse, the potatoes are done.

Place the potatoes in the microwave. Cook for 5 minutes, on high. If the legs have not collapsed completely, cook for a further 2 - 3 minutes.

Take the potatoes out with a dry dishcloth and squeeze them hard on both sides so that the cross opens up wide and the cooked potato squeezes out. Season lightly with Potato Spice.

Place on a plate. Snip the corner of the pack of Mushroom Sauce and squeeze a generous amount over each potato. Delicious with our Bang Bang salad and some milk or juice.
