Minty Summer Salad

A delicious fresh salad. The two most important tips I can give you is not to leave out the mint, it gives a refreshing clean flavour, and most importantly, dress the salad just before serving to prevent it from drawing water.

You Will Need:

Dressing
Salad
  • 3 large very ripe tomatoes, sliced into small wedges
  • 1 bunch small radishes, washed and sliced
  • ½ English cucumber unpeeled, halved lengthways and then finely sliced
  • 3 spring onions with green tops, sliced on the diagonal
  • a handful of fresh mint leaves, roughly chopped
  • a handful of fresh basil or parsley leaves, roughly chopped

Method:

Make the dressing in advance and keep it in the fridge.

Toss the vegetables, mint and basil together. Pour Dressing over just before serving.
