Papino, Lime and Chilli Sambal

A lovely fresh sambal, the sweetness of the papino complements the curry.

You Will Need:

For the sambal
  • 1 small ripe papino, peeled and pipped, reserve a few pips for garnish
  • 1 red chilli, finely sliced
  • ¼ cup (60 ml) Ina Paarman’s Lime & Coriander Reduced Oil Dressing
  • Ina Paarman’s Lemon & Black Pepper Seasoning
To garnish
  • butter lettuce
  • papino pips
  • fresh coriander leaves
  • lime slices
For the sambal
  • 1 small ripe papino, peeled and pipped, reserve a few pips for garnish

  • Ina Paarman’s Lemon & Black Pepper Seasoning
To garnish

  • fresh coriander leaves
  • lime slices

Method:

Dice or slice the papino. Add the chilli and Dressing. Toss and taste for seasoning.

Serve on lettuce leaves.

Garnish with a few of the reserved papino pips, fresh coriander and lime slices.
