Pecan Mud Pie

A dessert or teatime treat that looks stunning, yet takes only about 10 minutes to mix and 35 minutes to bake.
Pecan Mud Pie

You Will Need:

  • 2 extra large or jumbo eggs
  • ¼ cup (60 ml) butter, melted
  • ½ cup (125 ml) canola oil
  • ½ cup (125 ml) hot full cream milk
  • 1 x 550 g Ina Paarman Chocolate Brownie Mix
  • 100 g whole pecan nuts
Optional Glaze
  • 1 t (15 ml) honey, syrup or jam (warmed)

Method:

Adjust the oven rack to the middle position and preheat the oven to 180 °C.

Butter a 24 cm fluted flan dish.

Beat eggs, melted butter and oil together for 30 seconds on high speed until well blended.

Add milk and beat until well blended on medium speed.

Add dry Brownie mixture and chocolate chips.

Fold in carefully with a spatula.

Blend until just combined, do not beat.

Folding by hand gives the best result.

Pour and scrape the mixture into the buttered dish.

Arrange the pecan nuts in a circular pattern over to cover.(see pic)

Bake for 35 minutes until done.

Remove from the oven and brush the top with warmed honey.

Serve slices as is, or with whipped cream or ice cream as a dessert.
