Pickled Cucumber with Soy & Sesame

An addictive pickling liquid. Can be re-cycled once more with fresh cucumber.

You Will Need:

Dressing
  • 1 t (5 ml) Chilli & Garlic Seasoning
  • 1 t (5 ml) sugar
  • 1 T (15 ml) soy sauce
  • 1 T (15 ml) cider vinegar or rice vinegar
  • ½ t (2,5 ml) toasted sesame oil
  • 1 T (15 ml) sesame seeds (optional garnish)
Dressing
  • 1 t (5 ml) Chilli & Garlic Seasoning
  • 1 t (5 ml) sugar
  • 1 T (15 ml) soy sauce
  • 1 T (15 ml) cider vinegar or rice vinegar
  • ½ t (2,5 ml) toasted sesame oil
  • 1 T (15 ml) sesame seeds (optional garnish)

Method:

Season the sliced cucumber with Vegetable Spice, drain in a sieve or colander. Place all the ingredients, except the cucumber and sesame garnish, in a screw-top jar and stir well to combine.

Add the sliced cucumber, and stir and shake to coat all over.

Allow to pickle for at least 30 minutes before serving, or cover and refrigerate to pickle overnight for 3 days.

Serve cold or at room temperature.
