Thai Chicken Bowls
This simple Thai chicken with rice dish is perfect for a quick meal. The coconut cream gives it depth, while lemon or lime and our Coriander Pesto add some freshness.

Method:
Place coconut cream in the freezer for 30 minutes.
Season chicken breasts with Chilli & Garlic Seasoning.
Open tin of coconut cream and spoon out thick cream that solidified at the top into a frying pan.
Heat the thick coconut cream to a fast boil over high heat.
Add the chicken breasts and half cook.
The final cook happens when the chicken is added to the sauce.
Move chicken to one side. Add the remaining coconut liquid to the pan together with the water, Chicken Stock sachet, Coriander Pesto, sliced chillies and fish sauce.
Boil for 5–10 minutes, without a lid to reduce the sauce a little.

Slice chicken into small bite-size pieces. Add the sliced chicken and any juices that might have leaked out to the pan. Cook gently for another 2 minutes.
Taste and add lemon/lime juice.
Serve with rice and mango sambal.
