Tomato and Cucumber Sambal

A familiar winner with curry dishes.

You Will Need:

  • ¼ English cucumber, cut thinly into half-moon slices
  • 200 g cherry tomatoes, halved
  • 3 spring onions, sliced
  • 1 T (15 ml) fresh lemon juice
  • 2 T (30 ml) fresh coriander, chopped (leaves and stems)
  • Ina Paarman’s Green Onion Seasoning

Method:

Toss all the ingredients together and season with Green Onion Seasoning to taste.
