Tuna Salad with Couscous

This filling salad can be prepped in advance, making it an ideal lunchbox fare. It is great as a side salad for a braai, and the leftovers can be used for the lunch boxes the next day.

To microwave the sweetcorn, place uncovered on a plate and cook for 3 - 5 minutes. For a more economical option, use regular couscous, but cook for only 5 minutes.

Method:

Cook the giant couscous according to the packet instructions (about 15 - 18 minutes).

Drain and set it aside in a mixing bowl to cool for 15 minutes or drain butterbeans if using.

To the couscous, add the Sun-Dried Tomato Pesto, drained tuna chunks, sweetcorn kernels, tomatoes, parsley, cucumber, and olive oil.

Season with Seasoned Sea Salt to taste and add Greek Dressing, then stir to mix.

Refrigerate until ready to serve.

Serve cold or at room temperature.
