Slow-roasted portobellini mushrooms, sun-ripened tomatoes, and thyme are slow-cooked to form this rich pasta sauce.
It’s delicious with penne or spaghetti and a grating of parmesan, and equally wonderful served with gnocchi and crumbed goat’s cheese. Also try it as an oven-bake sauce for chicken.
