Poppadum Egg Snacks

Is the cupboard bare, except for a long forgotten pack of poppadum’s and a few eggs in the fridge?

You Will Need:

1 pack poppadum’s
canola oil
3 eggs, hard boiled
Ina Paarman’s Masala Seasoning
3 – 4 T (45 – 60 ml) mayonnaise

You will need

1 pack poppadum’s
canola oil
3 eggs, hard boiled
Ina Paarman’s Masala Seasoning
3 – 4 T (45 – 60 ml) mayonnaise

Method:

Shallow fry the poppadums in oil.

Peel and slice the eggs.

Put a dollop of mayonnaise in each poppadum, top with sliced egg.

Season with Masala Seasoning.

Garnish with fresh coriander if available and serve.

 

Variation

Season eggs with Cajun Spice if Masala Seasoning is not available.

Replace the eggs with slices of avo and wedges of cherry tomatoes.
